The noodle stir-fry called Pad Thai is surely the most famous dish in Thailand, its bright and vibrant flavors hawked on every street corner by enterprising vendors.

In addition to this classic with meat, seafood, vegetables, bean sprouts, and crunchy peanuts, we love using this sauce to add zing to simple baked chicken or to give exotic excitement to chicken wings. At dessert time, it's also terrific when transformed into a spicy tamarind sorbet.

Stir-fry with thin rice noodles, chicken, shrimp or tofu, bean sprouts and scallion for a traditional Pad Thai. Stir-fry with chicken & peanuts or cashews. Marinate poultry, beef, pork ribs or loins. Finishing sauce for grilled or baked meats, or chicken wings.
